The Torta di Nocciole d'Alta Langa is a magnificent, flourless cake celebrated as a specialty of the Alta Langa area in Italy's Piedmont region. Its character is entirely defined by one star ingredient: the local, protected Nocciola del Piemonte I.G.P.
This is not a light, fluffy cake; it is dense, intensely aromatic, and wonderfully rustic. It uses ground hazelnuts in place of flour, giving it a rich, buttery texture and an incredibly concentrated, nutty flavor.
The Nocciola del Piemonte comes from Alta Langa, a section of the Piemonte region where cold nights and salty breeze allow the hazelnuts to mature slowly and balance the hazelnuts' sweet notes.
Alta Langa hazelnuts are never picked from the tree. They simply drop off the trees! The hazelnuts are gathered from the ground, unshelled, dried, and finally roasted to enhance their rich, complex flavor and elegant aromas.
